When I was 11 years old, my dad was diagnosed with stage 2 colon cancer. Spoiler alert, he’s still here…
But the fear and horror of that diagnoses is still as palpable today as the morning my parents sat my sister and I down to tell us the news. Fast forward to 2015, and news broke from the World Health Organization that processed and red meat were now considered class 1 and class 2 carcinogens.
Growing up on a meat and potatoes diet, and a glass of milk for strong bones at supper, you can imagine the shock around our dinner table when we realized the very thing all of us had been encouraged to consume could have stolen everything… If you’re already plant-based, you might know the rest of the story well.
We watched the documentaries, read the books, and like pandora’s box, the truth quickly unraveled before me about the horrors of factory farming and the impact of animal agriculture on our environment. There was just one problem. I didn’t know what the heck to eat.
I started making really easy veganized recipes based on the food I had grown up eating, and sharing them on social media under the name plantyou. And what do you know - apparently that resonated with some of you. About a million to be exact.
